why would a pure bred chocolate lab end up with blue eyes?

I have a chocolate lab and she is registered through AKC and she has a family tree proving she is pure blood. Although, the vets doubted she would keep her blue puppy eyes she has them to this day and she is almost 8 months, yet now they are more of a white blue then actual blue. She seems to be a perfectly normal lab who is willing to learn, happy go lucky, and loves water. She was the only one out of her liter to have this trait and I was wondering if it was by chance she ended up with them.
She isn't blind either

One or both of the parents probably carried the trait. Sometimes things just pop up, even if dogs that are only supposed to be certain colors.
