In the current economic climate, every dollar is significant to the household budget. Families often find themselves shaving expenses from their budgets wherever possible, including from their food budgets. Red lentils are both inexpensive and exceedingly healthful. They are packed with fiber, which helps lower cholesterol and regulate blood sugar. They also contain six minerals, two B-vitamins, lots of protein, and almost no fat. In short, a hearty bowl of red lentil soup makes a healthful, inexpensive meal. In fact, a whole pot of this delicious soup can be prepared for under three dollars.
To make a pot of red lentil soup, you will need:
- 1 Tbsp. olive oil or canola oil
- 1 small onion, diced
- 3-5 large cloves garlic, chopped coarsely
- 1 lb. red lentils, available in the dried beans section of your grocery store
- 12 cups water
- 10 tsp. chicken bullion powder(low sodium version is available if this is of concern to you, or reduce the amount used up to 1/2)
- 1/2 tsp. ground cumin (optional)
- Salt and pepper to taste
- lemon juice
Instructions:
- In a large pot, saute onion and garlic in oil over medium heat until onion is fragrant and translucent.
- During this step, keep about 2 cups of the water within immediate reach. Add lentils to pot. Working quickly so that lentils do not burn to bottom of pot, stir lentils to coat with oil/onion/garlic mixture. Quickly add reserved 2 cups of water, and stir.
- Add remaining water, bullion, cumin (optional), and some salt and pepper. Remember that liquid will reduce during cooking; it is better to use less seasoning than you expect to need at this point. More can be added later if necessary.
- Bring water to a boil, then reduce heat and simmer uncovered for 30-40 minutes until lentils soften and begin to lose their shape. Or, continue to cook even longer until lentils dissolve nearly completely. Stir frequently while cooking, paying careful attention to scraping bottom of pan to prevent burning. Add more water if necessary.
- Add a generous splash of lemon juice to each bowl before serving.
In my house, we like to eat this soup with whole wheat pita bread, which we break up into the bowl like crackers. This meal is perfect with a glass of milk. Although the ingredients are simple and the appearance plain, this soup is healthful for both the body and the budget, and delicious too.
